A fine, Fine Champagne cognac from the house of Rémy Martin.  Founded in 1724 by Rémy himself, the house only blends eaux-de-vie from the expectional Grand Champagne and Petite Champage regions, thus maximising its ageing potential.

It is reasoned that the centaur logo that emblazons each bottle was inspired by Rémy Martin as his star-sign was Sagittarius.  Apparently, the Chinese for Rémy Martin translates literally as: man-headed horse.  Yet Chiron has only been a symbol since 1870, long after Martin left us for the great oak barrel in the sky. 

The Prime Cellar Selection debuted in the Americas in April 2014, followed by Europe and Asia in 2015.  It is part of a series highlighting how specific aging environments affect flavor profiles, this expression matured in Cellar No. 16 using new oak casks, giving it intense vanilla and baked apple notes.  It was traditionally sold in 1-liter bottles for duty-free and travel retail, and is now largely discontinued or available through secondary auction and specialty market.
